Gosh.

I really hope that this is a shiitake.


No matter. It's going in my omelette anyway.

UPDATE: delicious!! sliced and sauteed in bacon grease, and added to eggs with parsley and chives from the garden and grated Parmesan and asiago.

Wow- is that from your mushroom growing stump of weirdness? That sure seems like it grew pretty quickly. I take it you'd recommend those things, then...

Julienned shiitakes are great in stir fry with shredded chicken, a gravy (made with a tablespoon of oyster sauce, a half teaspoon of sugar, a half teaspoon of cornstarch, a pinch of kosher salt, a dash of soy sauce, all dissolved in a cup of water) and chopped raw scallions as garnish.

Start with 2 cloves severely crushed fresh garlic (root ends removed), 2 slices of fresh ginger in a wok or a large saucepan with 1 tablespoon oil, heated till wisps of smoke come off the oil.

Toss in the garlic and ginger and make them sizzle. Then toss in 1/2 lb of shredded chicken and 1 cup of julienned shiitake mushrooms. Stir around till the chicken and mushrooms are well mixed. Reduce heat to medium and cover for a minute.

During this time, make the gravy. Now turn the heat back up to high and pour the gravy mix into the chicken and mushrooms. Mix around a bit and cover, leaving the heat on high. Now chop one stalk of scallion (peel off wilted outer layers and cut off wilted ends and roots and wash thoroughly). By the time you're done chopping the scallion, the chicken and mushroom mixture will have come to a "boil" (the gravy will be bubbling). Turn off the heat, pour out chicken and mushrooms onto a plate (family-style) or over individual plates of rice. Sprinkle scallions over the top.

Total cook time should be about 6 minutes, as shredded chicken cooks real fast. Of course, adjust cooking time for chicken doneness.

If so, I would venture to say it isn't a shiitake.
