it's the muffin, man.
Just look at that pumpkin muffin. Look.
Now imagine it warm out of the oven, accompanied by a cold glass of apple cider.
You want it, I know you do. But, alas, you'd have to bake to get it. What a chore.
But here I am anyway, showing off my gorgeous, moist, crumbly, spicy homemade baked goods. Taunting you.
Aw, now, don't make that sad face. Don't pout. I'm really not that mean.
So, here. I want you to have muffins. Honest...I'll even make it easy for you.
1 box of super moist spice cake mix
1 can pumpkin puree
Mix
Bake at 350°F for 20-25 minutes
And if you feel like being fancy, add a struesel topping (like I did) or some cream cheese frosting.

Breda, you have a muffintop! :P
I shall occupy Breda's kitchen until I get my muffins for free!
100% of the muffins are owned by 100% of the Bredas.
So mean. These muffins are not Lydia friendly. *sob*
I'm marching to Ohio and demanding free muffins & beer from Breda! You with me Weer'd?
There's no reason why you should know I'm on a diet, but still: rarrgh!
Um, it's Phil from England here by the way (not so obvious from my WordPress ID, but I don't have a Google account, so...)
You can also use chocolate cake mix...but man, does it come out rich...
Eva wants to know if that's it. Just the dry mix and the pumpkin. Or are you making the cake as usual and adding the pumpkin to that?
It's time to occupy Breda.
David - yep. Just the two ingredients, promise. Dry mix + pumpkin.
Lydia - I've read you can use gluten free mix too !
I can haz bacon in the struesel?
I'll be right over...
I see your muffin and raise you some Peanut Butter cup brownies with peanut butter added to the mix.
Since I'm not into Pumpkin Stuff (unless it get Chucked from a Catapult in Delaware), feel free to eat my share.
But don't even THINK about going near the Chocolate.
The small (14oz?) can of pumpkin mix, or the big (30oz?) can?
Smaller can, yes
Okay. That does it. I am so getting the gluten free cook books out!
Had one from the local GF bakery last month for my birthday. Now I need another.
And another.
And . . . ah, you get the idea.
Oh, Breda! Lovely stuff!
Regular apple cider, or Cueball's apple cider?
If I drank CB's, I wouldn't remember the muffins!
If you can't find the super moist brand mix, I found that the regular spice cake mix with just a little water added to get the right consistency works just fine. According to my wife, they're delicious. I don't care for pumpkin; more of a chocolate fiend.
Is the cider Patterson's? (Best. Cider. Ever.)
Tried these last night. Fantastic. I'll be doing them again.
(Topped with a pinch of brown sugar and a dash of cinnamon.)
