bacon built right in

I know, I know...two food posts in a row? Let me explain about my blogging lately.

I'm waiting for spring which, as usual, is taking its time getting here. The snowdrops and crocuses have bloomed, the sparrows have moved back, the sun is making an appearance more often than not now, and the chives have started poking up through the ground. I just want out - out of the house, out of these layers of clothing - the cabinfever is relentless.

I also don't have any range reports. We went to the store the other day and the ammo shelves were bare. I am not exaggerating - it freaked me out. So I'm hoarding the little bit of .380 I have left and go to the range with a box of .22, hoping that any practice at all is better than none.

I read the news and am alternately scared, angry, and...no. That's it. I'm just scared and angry. I was going to say that I was also amused by the bumbling incompetence and idiotic policies coming out of this administration but then the reality of the next 4 years hits me and I get scared and angry all over again. I mean, Barry & Co. would be hilarious if it weren't for the fact that they were running the country. So I write about it because I can't not - I need to vent my fear and frustration but it's nothing more than spitting in the wind.

So I try to do quiet, mindful, satisfying things that I love. I write, I read, I tinker around in my studio...and I cook. One of the more useful things about this struggling economy (and the resulting effect on Mike's job) is that I've had to start being more creative in the kitchen - I make things from scratch, I experiment with cheaper cuts of meat, I buy in bulk. We scrimp and save a bit more than we have in the past so that we won't have to do without the little luxuries we love...like fancy cheese, microbrewed beer and, of course, bacon.

It's the little things in life that bring the most happiness...and sleeping in followed by Sunday brunch on a sunny porch is no exception. But putting the bacon in the waffles?

Delirious joy.

Do Mike and you have a 9mm? I could share a little of my secret stash.

I think it is time to break out the pellet guns, that's what I learned to shoot with and it helps with the basics.

Driving back from FL I ate Bacon three meals in a row.

Seriously. We are so hip-deep in good beer we've resorted to giving a lot of it away.

Remember, in the hierarchy of financial needs, food is first, shelter is second, transportation is third. Nothing else, credit card debt, student loans, nothing comes before these.

In a tough time, it's best to remember the essentials. I just missed being laid off myself a week ago. Scary. Many of my work friends weren't so fortunate.

just put your regular waffle batter on the iron, add some bacon, close the lid and let cook as usual.

Here you are with the bacon again. I swear, one of these days I'm going to send you a couple of tons of bacon.

Don't be surprised if you see a refrigerated tractor trailer pull up in your driveway one day and the driver says "Bacon delivery for Breda from Mr. Assrot, ma'm."

You go girl. Eat that bacon, just be careful you don't eat it as much as you write about it lest you turn into bacon thine ownself.

& put the batter on first, then some bacon, then close the waffle iron

Just came across your blog via Digg and I must say that the lack of ammo scares me too.

Luckily, my father is an avid reloader and I have been able to keep my guns firing by bribing him. Still, my carry gun is loaded with my last speed loader of .357mag and my loader is full of .38 special. We're coming into dangerous times.

Besides that, I love your blog so far. You have made a reader out of me!

What is it about Florida and bacon? Up in the DC area, eating bacon is consider taboo, at least publicly, but down in Florida it is worshiped as a god. I have seen buffets down there with bacon wrapped steak and bacon wrapped scallops and bacon wrapped bacon. They have bacon of the month clubs down. Unreal.

I also like your Chicks with Guns pic. Funny.

Bacon waffles are one of my favorites, I dice up raw bacon and cook it in the waffle iron until crisp, then add the batter (Bisquick). Also dicing the bacon gives some control over fat, you can toss the all white fatty sections...
